Potato Soup (Saltgrass Steakhouse Style)
This potato soup is a copy cat of Saltgrass Steakhouse Baked Potato soup. Delicious!
Ingredients
1 pound bacon5 pounds red potatoes
4 cups chicken broth
1 small onion
4 stalks green onions
2 carrots
1 stalk celery
2 teaspoons salt
2 teaspoons pepper
1 teaspoon garlic powder
2 teaspoons corn starch
grated cheddar cheese
Instructions
First chop one pound of bacon into small bits (you can also use kitchen scissors for this), Brown the bacon in a large pot on medium heat. Really brown them. You want all the bacon grease you can get out of it.Use a food processor to finely dice all vegetables (onion, green onion, celery, carrots). Add all the diced vegetables into the pot with bacon. Let it all saute and the vegetables cook together nicely. Add the salt, pepper, and garlic powder.
Cube 5 pounds of red potatoes and add to the vegetable mixture. Let the potatoes brown for about 10 minutes. Pour in 4 cups of chicken broth. Let cook until potatoes are fork tender. Scim off any excess grease that gathers on top of soup with a spoon. Add 2 pints heavy cream and bring mixture to boil. Remove some potatoes (about 2 cups) and mash with fork; add back to soup. Add 2 teaspoons corn starch with enough water to dissolve and add to soup; soup should have a nice thickness. If soup becomes to thick add milk to desired consistency.
Pour into soup bowl top with cheddar cheese and enjoy!
