This is very good, even better than MaCalister's!

2 raw chicken tenders
2 tablespoons butter
1 tablespoon flour
1/3 small onion, minced
3 cups half and half
1 can cream of chicken soup 1
teaspoon chili powder
1 teaspoon red pepper or cayenne
1 cup salsa
1 cup chicken broth
1 tablespoon chopped green chiles
4 ounces shredded Monterey jack cheese (about 1 cup)
Tortilla chips
1 bunch green onions, chopped

Cut chicken in small pieces, salt and pepper to taste, stir fry in olive oil. When done set aside to cool. When cooled lightly shred in processor. In a medium pot, heat butter over medium heat, add onion saute until soft. Stir in flour and add half and half. Stir until bubbly and thickened. Add cream of chicken and stir until creamy. Add chili powder, red pepper, salsa, and green chilis. Thin with chicken broth until desired texture. Stir in cheese. Ladle soup into bowls; serve chips on the side (or crumble a few chips over each bowl of soup). Garnish with chopped green onions. Yield: 4 servings
