Great for homemade chili and soup.
Ingredients10 pounds home grown tomatoes
10 pounds jalapeños, diced
2 onions, diced
1 cup white vinegar
2 tablespoons lemon juice
2 tablespoons salt
1 tablespoon sugar
InstructionsPlace tomatoes in large pot, fill with hot water, place over high heat, and scald for about 10 minutes. Drain, and place in cold water. Skins will slide right off. Core out middle and chop in processor.
Place chopped tomatoes, onions, jalapeños, vinegar, lemon juice, salt, and sugar. Bring to boil and cook for 5 minutes.
Place in sterilized pint-sized jars, top with lids, and place in hot water bath for 7 minutes. Remove with thongs and place on towel to cool. Tighten lids and store in cool dry place.
