Ingredients

1 cup yellow corn meal
1 cup self-rising flour
3 tbsp sugar
1 tsp salt
2 tsp baking powder
1 egg
1/2 can cream-style corn
1 jalapeno pepper, chopped
3 tbsp onion, finely chopped

Instructions

In medium size bowl, mix dry ingredients together. Add corn and egg, stir until creamy, add pepper and onions, and stir. If more liquid is need add more corn. Don't make to thin. The mixture should be drier than cornbread. Set aside at least 15 minutes before dropping 1/2 teaspoons into hot grease. Cook until golden brown.
