3 cups sugar
1/2 cup water
1 cup light corn syrup
pinch of salt
1/2 tsp cream of tartar
2 egg whites
1 tsp vanilla
1/2 cup chopped pecans


Beat egg whites and cream of tartar until thick.

In heavy pot add sugar, salt, water, and syrup. Cook over medium heat until hard ball stage. Remove from heat and pour small amounts into beaten egg whites while beating with mixer continuously. Add vanilla and beat until mixture looses gloss, add pecans. Pour onto cookie sheet lined with wax paper. Work fast. When firm flip unto another sheet of wax paper and peel off wax paper from bottom. Cut into small pieces.
