Pinwheel - Fiesta
I needed a quick and easy finger food for our annual Drinking Liberally Christmas party. I found this recipe on the Taste of Home website. I like this recipe because I usually have most of the ingredients, it is easy and not expensive to make, easy to transport, and makes a lot - anywhere from 60 to 80 pieces. Ingredients
1 package (8 ounces) cream cheese, softened (I put it in the microwave for 30 seconds on level 3. If it is not creamy - repeat. This eliminates lumps.)1/2 cup sour cream (I let it get to room temperature)
1/4 cup picante sauce
2 tablespoons taco seasoning
Dash garlic powder
1 can (4-1/2 ounces) chopped ripe olives, drained
1 can (4 ounces) chopped green chilies
1 cup finely shredded cheddar cheese
1/2 cup thinly sliced green onions
Hot peppers - optional
8 flour tortillas (10 inches) (For Christmas I use the spinach and tomato tortillas for their green and red colors.)
Salsa
Instructions
1. In a small bowl, beat cream cheese, sour cream, picante sauce, taco seasoning and garlic powder until smooth. Stir in olives, chilies, cheese and onions. Spread about 1/2 cup on each tortilla. Top with hot peppers- optional.2. Roll up jelly-roll style; wrap in plastic. Refrigerate for 2 hours or overnight. Slice into 1-in. pieces. (I cut them smaller) Serve with salsa.
