Sausage Phyllo Cups
In early June 2021, the USA was 63% vaccinated against the Covid-19 virus making travel plausible again. We flew from Myrtle Beach, SC to Cleveland, OH to visit family. Nephew Chris Kollm and his wife Tara hosted a fantastic cook-out at their home in Parma Heights. Niece Kelly Kollm Cain brought these sausage phyllo cups as an appetizer. She said they were the most requested appetizer she makes. This recipe is so versatile. Use the type of sausage, cheeses, dressing and "extras" that you like to make this recipe your own.
Ingredients
60 miniature phyllo cups (4 boxes, 15 cups to a box)1 lb ground sausage, browned (we like Jimmy Dean, hot)
1 cup prepared ranch dressing (I used a creamy Caesar dressing - delicious too)
1 1⁄4 cups monterey jack cheese
1 1⁄4 cups cheddar cheese (sharp and or or mild)
3 ounces chopped black olives (optional)
Red bell pepper (optional)
Red pepper flakes (optional)
Instructions
Cook and crumble the sausage. Let cool.Stir together the sausage, dressing, cheese and remaining ingredients. Fill the phyllo cups.
Place filled phyllo cups on a baking sheet.
Bake:
12 to 15 minutes @ 350⁰
8 to 10 minutes @ 400⁰
4 to 7 minutes @ 450⁰
Tip: The filling can be made ahead. Wait to fill the phyllo cups just before baking so they don't get soggy. Serve promptly as cups tend to lose crispness as they sit.
