Cobbler Peach & Berries
This cobbler has the fresh taste of peaches combined with berries, warm and slightly spicy, under a soft cake like topping. You can swap out the peaches and berries with any fruit. Serve with ice cream or whipped cream.
Ingredients
1/2 cup unsalted butter1 cup all-purpose flour
2 cups sugar, divided (I prefer to use 1 cup of sugar with the flour, and 1 cup of brown sugar with the fruit)
1 tablespoon baking powder
Pinch of salt
1 cup milk (I use unsweetened almond milk)
4 cups fresh peach slices - I prefer peach "chunks" & cut the slices in half
(Canned peaches work too - be sure to drain them)
1 cup frozen berries (I like Wyman's triple berries) - this is optional
1 tablespoon lemon juice
Ground cinnamon or nutmeg (optional)
Ice cream or whipped cream (optional)
Instructions
Step 1Melt butter in a 13- x 9-inch baking dish. If making half a recipe, use a 2 quart casserole dish.
Step 2
Combine flour, 1 cup sugar, baking powder, and salt; add milk, stirring just until dry ingredients are moistened. Pour batter over butter (do not stir).
Step 3
Bring remaining 1 cup (brown) sugar, peach slices, berries* (if you are using them) and lemon juice to a boil over high heat, stirring constantly; pour over batter (do not stir). Sprinkle with cinnamon, if desired. *Personal choice - we like a less "soupy" cobbler so I drain a little of the liquid - an eighth of a cup or so, before pouring the fruit mixture over the batter.
Step 4
Bake at 375° for 40 to 45 minutes or until golden brown. Serve cobbler warm or cool.
