Ginger Molasses Cookies
In December 2020, during the Covid pandemic, Pete & Lynda Dobson - one of our favorite Kings Creek neighbors moved to Portland, Maine. I know - who moves from South Carolina to Maine in the winter? The good news is that they came back to Pawleys Island for a family reunion in July 2021, and Joanna & Alan Jones hosted a neighborhood potluck party for them. Carol Leis brought these cookies. Not only did they look professionally made but they tasted even better. These are now on our list of Favorite Cookies!
Ingredients
1 lb. butter½ tsp salt
3 c. brown sugar
2 large eggs
¾ c. dark molasses
¼ c. water
6 ½ c. unsifted flour
1 tbsp. baking soda
1 tbsp. cinnamon
2 tsp. cloves
2 ¼ tsp ginger
Instructions
Cream butter, molasses, water, salt and brown sugar. Beat in eggs. Sift dry ingredients together and add to creamed mixture. Mix well.Refrigerate for 24 hours.
Roll into 2 " balls. Roll in granulated sugar.
Bake at 350 for 15 to 18 minutes
