Salted Cod
Ingredients
cod filletcoarse sea salt
sugar
Instructions
1. Wash and dry the fillet of cod. Cut.2. Mix salt and sugar 1:1.
3. Completely surround cod with salt-sugar.
4. Air tight containter. Refrigerate 1-2 days.
5. Once cod firm up, rinse in cold water and pat dry.
6. Wrap in muslin cloth and leave on a wire rack in fridge for 7–10 days.
