Ingredients
0.25 oz active dry yeast1-1/4 cup milk
3 cup bread flour --> try 2-1/2 cup crumbling texture
1 tbsp sugar
1/2 tsp salt
3 tbsp butter
8 sausages
1 egg
Instructions
1. Warm 1/4 cup milk to 110-115F (Fridge milk microwave 25 sec). Add yeast. Add 1/2 tsp sugar. Bloom 10 min till foam doubles up.2. Mix flour, sugar, salt.
3. Add 1 cup 110-155F warm milk (fridge milk microwave 60 sec). Mix in.
4. Add yeast. Mix in.
5. Dough hook, speed 2, 1.5 min.
6. Fold in butter at center of dough.
7. Speed 2 till form dough ball and clean bowl sides, about 4 min. Avoid over knead (i.e. ball climbs up the hook).
8. Wet towel over bowl. Proof 40 min till doubles.
9. Divide 10 pc (2.5 oz each), roll long rope, wrap around sausage. Proof 40 min till doubles.
10. Brush egg mix. Bake 375F 20 min.
