Bread #2 - White Sandwich
Makes 2 loaves.
Ingredients
3 cups AP flour4 tsp instant yeast
1.5 tbsp sugar
1.5 tbsp melted butter / mild oil
3 cups warm milk, about 85° F
3 + 1.5 cups bread flour / AP flour
1-1/2 tbsp salt
Instructions
1. Combine 3 cups AP flour, instant yeast, sugar. In center well, add melted butter, warm milk. Stir.2. Add 3 cups of flour, 1 cup at a time. Stir to shaggy dough.
3. Cover with damp towel and rest 20 minutes. (10 min??)
4. Uncover dough, add salt, 1/2 cup flour. Knead Speed 2, 3 min, until soft tacky but not sticky. Add more flour by 1/4 cup as needed.
5. Oil bowl. Cover and proof till doubled. (30 min??)
6. Flatten to remove air bubbles. Divide into 3 loaves, oil dough in greased pans.
7. Preheat oven to 375 degrees. Cover and proof 40-60 min (30 min??) until dough spring back slowly.
8. Bake for 35-40 min, until 200F internal temp.
9. Let cool. Slice.
