Lemon Shortbread
Ingredients
1 cup butter, softened1/3 cup granulated sugar
1 tbsp lemon extract/zest
2 cup all purpose flour
Chocolate Variation:
1 cup butter, softened
1/2 cup granulated sugar
1 tsp vanilla extract + 1/8 tsp salt
2 cup all purpose flour
2 tbsp chocolate/cocoa blend + 1/2 tbsp espresso powder
Vanilla Variation:
1 cup butter, softened
1/3 cup granulated sugar
1 tsp vanilla extract + 1/8 tsp salt
2 cup all purpose flour
Keto Variaion:
365 almond flour - 6g per 1/4 cup
substitute sugar
less butter, 25F lower, bake longer time.
Instructions
1. Preheat 325F.2. Cream butter and sugar.
3. Add lemon extract, blend well.
4. Stir in flour, 30 seconds.
5. Roll out to 1/2" thick. Cut.
6. Bake 325F, 20 min, until edges slightly browned.
