Fish Ball (Trial 1)

Ingredients
1kg fish meat, chop to paste. grass carp, Spanish mackerel, salmon3-1/2 tsp corn/wheat starch
3-1/4 tap sea salt
1 tsp white pepper / bouillon
1 egg white
1/2 cup cold water
Instructions
1. Beat fish paste. Stir 8 min.2. Add starch, salt, pepper, egg white. Stir 6 min. Scrap. Stir 1 min.
3. Add water slowly to incorporate. Stir 1 min.
4. Speed 2 for 10 min.
5. Squeeze into balls with spoon, scoop into ice water to set, or directly into boiling water to cook.
