Soft Dinner Rolls
Makes 16, 3 hrs
Ingredients
2 tsp active dry yeast, 1/4 cup water 110-115F + 1/2 tsp sugar1/4 cup butter, melted
1/4 cup sugar
1 tsp salt
1 cup milk
2 egg
5 cup flour
Instructions
1. Bloom yeast.2. Add butter, sugar, salt. Stir.
3. Heat milk till bubbles at edge.
By hand:
4. In mixer bowl, add milk, butter mix, stir. Let cool down.
5. Add beaten eggs, yeast, stir.
6. Add 2 cup flour, stir slow till silky & shiny.
7. Add 2 cup flour, stir slow till sikly & shiny.
Stand mixer:
8. Add 1/4 cup flour at a time (up to 1 cup, may not need all). Mix Speed 2, 1 min each, till soft sticky ball clings to hook. Too much flour less fluffy bread.
9. Knead till bouncy. Speed 2, 2 min.
10. Grease bowl. Proof 30 min.
11. Pull dough to form smooth top ball. Pinch 4 sides & pull under bottom center. Roll in metled butter to coat.
12. Place in bake pan 1" apart. Proof 30 min.
13. Prehe.at 400F.
14. Bake 400F 10-12 min.
15. When hot, brush w/ melted butter & sprinkle with salt.
