Yields 1 cup. Medium viscosity in room temp.

Ingredients

1 cup granulated sugar
6 tbsp butter, room temperature, cut into pieces
1/2 cup heavy cream, room temperature
1 tsp sea salt

Instructions

1. Measure out everything before start. Do not leave stove once started.
2. Heat sugar over medium-high heat on heavy bottom saucepan. Sugar will clump up, keep wishking until melt and turn dark amber.
3. As soon as it's dark amber, carefully add butter. Stir until melt. Remove from heat if too hot.
4. Remove from heat, slowly pour in heavy cream. Whisk until smooth.
5. Whisk in sea salt.
6. Let cool in pan for 10 min.
7. Keep in jar till room temperature. Store in fridge for up to 1 month.
