Meringue
Makes 36 dollops
Ingredients
4 egg whites1/4 tsp cream of tartar
1/3 cup powdered sugar
Instructions
Preheat 350F.1. Chill eggs.
2. Separate egg yolk and egg whites.
3. Let stand to room temperature.
4. Whisk, Speed 2, till a little bit foamy.
5. Add cream of tartar.
6. Whip, Speed 4, until stiff peaks form on both the egg white and the whisk tip. I'm should be able to hold its shape on a moving whisk. Overbeating will cause foam to collapse into water.
7. Sift in sugar.
8. Whip till smooth, fluffy and glossy.
9. Bake 350F 10 minute, high rack position 4" below heat element.
10. Leave in turned-off oven to completely dry out.
