Classic Madeleines
Makes 20
Ingredients
4 oz unsalted butter, melted until browned1 tsp vanilla extract
1 tsp lemon zest, finely grated
3/4 cup all-purpose flour
3/4 tsp baking powder
1/4 tsp salt
2 eggs, room temp
1/2 cup granulated sugar
Instructions
Batter1. Melt butter. Stir in vanilla and lemon zest. Let cool.
2. Whisk flour, baking powder, and salt. Set aside.
3. Stand mixer, whisk eggs at Speed 4, gradually add sugar. Speed 6, whip until very thick and pale, about 3-4 min.
4. Fold in butter mixture.
5. Fold in flour mixture.
6. Rest 10 min in room temp.
Bake
1. Preheat 350F.
2. Brush pan with butter, lightly dust with flour.
3. Scoop into center of mold. No need to spread.
4. Bake 10 min, or until bellies have risen and golden brown.
5. Flip out to cool on rack.
