Chocolate Sponge Cake
Makes 8" round x 1" high cake
Ingredients
3/4 cup cake flour1/4 cup unsweetened cocoa powder
1/8 tsp fine salt
3 large eggs
1/2 cup granulated sugar
1 tsp vanilla extract
Instructions
1. Lightly grease an 8-inch cake pan. Line bottom and sides with parchment paper.2. Lightly grease the parchment paper and dust with flour.
3. Preheat 350F.
4. Sift the flour, cocoa powder, and salt together.
5. Whisk eggs and sugar on medium-high until ribbons, about 5 min.
6. Add vanilla extract and whisk just a few seconds.
7. Sift one-third of the flour over the egg mixture and gently fold to incorporate. Do not deflate the egg mixture.
8. Sift the rest of the dry ingredients over the batter and gently fold just to incorporate. Do not overmixing.
9. Immediately pour batter into pan and bake, about 25 minutes.
10. Leave cake in pan until cool enough to handle, then invert onto wire rack to cool.
