Egg Tart Filling
Ingredients
Full Portion (fills 24 egg tart molds):3/4 cup hot water
1/2 cup sugar
1/3 cup evaporated milk
3 eggs
1 tsp vanilla
One-Third Portion (makes 3/4 cup, fills 6 shells @ 95% full, 7 shells @ 80% full):
1/4 cup hot water
2 tbsp + 2 tsp sugar
1 tbsp + 2 tsp evaporated milk
1 egg
1/3 tsp vanilla
Instructions
1. Melt sugar in hot water.2. Add evaporated milk, whisked eggs, vanilla. Mix.
3. Strain. Chill 15 min.
Assembly:
1. Preheat 400F.
2. Use rough puff pastry. Divide into 24. Spread into mold.
3. Fill pie 90%. Chill 5 min.
4. Bake 37 min 400F.
