apple pie roll ups
Fresh apples are turned into a warm, delicious filling which is then loaded into flour tortillas rolled in butter, cinnamon and sugar, and baked to heavenly sweet goodness.
Ingredients
HOMEMADE APPLE PIE FILLING3 Gala, Yellow Delicious, or Honeycrisp, apples, peeled, cored, and diced into ½-inch pieces
⅓ cup granulated sugar
2 tbs unsalted butter
¼ cup water
1 teaspoons ground cinnamon
½ teaspoon freshly grated or ground nutmeg
¼ teaspoon kosher salt
1 tablespoon cornstarch
SWEETENED TORTILLA WRAPS
4–6 (medium) flour tortillas
2 tbs butter
¼ cup sugar
2 tsp cinnamon

Instructions
In a small Dutch oven or heavy pot over medium heat, cook the apples with 1/3 cup sugar, 2 tablespoons butter, 3 tablespoons water, and 1 teaspoon cinnamon with the nutmeg and salt.When the mixture comes to a boil, cover, and reduce heat to a simmer. Cook for 7-10 minutes, or until the apples are softened.
Whisk together the cornstarch and remaining 1 tablespoon water. Add into the apple mixture and stir until thickened, about 2-3 minutes. Remove from heat and let cool slightly.
Preheat oven to 375°(F)
Melt 2 tablespoons butter in a small bowl (microwave for about 20 seconds)
On a large paper plate, mix 1/4 cup sugar and 2 tsp cinnamon together.
Spray a baking dish with non-stick cooking spray or use butter.
Fill each tortilla with 1/4 cup of the apple mixture. Roll tightly, and brush all over with melted butter.
Roll filled and buttered tortilla through the sugar cinnamon mixture. Place in prepared dish. Repeat with remaining tortillas.
Bake for 20-25 minutes, or until the apple pie roll ups are crisped.
Let cool for 5 minutes, and serve.
NOTES
Drizzle with caramel sauce for extra goodness!
Serve with vanilla ice cream or whipped cream.
