Ingredients
1 pound roll of breakfast sausage4 eggs
1 cup sharp Cheddar cheese, shredded
1 cup Bisquick baking mix
Instructions
Preheat your oven to 350°F (175°C) and grease a 12-cup muffin pan with non-stick cooking spray.Crumble the sausage into a skillet over medium-high heat and cook until no longer pink. Drain off the fat and let the sausage cool slightly.
In a large mixing bowl, lightly beat the eggs. Add the shredded cheese, Bisquick, and cooked sausage. Mix well.
Fill the prepared muffin cups about ¾ full with the mixture.
Bake for 18-20 minutes, or until golden brown on top.
