Chocolate Mayonnaise Sheet Cake
Ingredients
Ingredients:3 cups flour, unbleached, sifted
1/3 cup cocoa, baking
3 teaspoons baking soda
1/2 teaspoon salt
1 1/2 cups mayonnaise
1 1/2 cups sugar
1 1/2 cups water, cold
1 1/2 teaspoons vanilla extract
Choco Glaze:
Ingredients:
4 ounces unsweetened chocolate bars
3 tablespoons butter
2 cups sifted powdered sugar (I substituted it to brown sugar)
6 tablespoons water
Instructions
1. Preheat oven to 350 degrees F.2. In a bowl, sift together the flour, cocoa, baking soda, and salt; set aside.
3. In the bowl of an electric mixer, combine the mayonnaise and sugar and beat at medium until blended.
4. With mixer running, gradually add the cold water and vanilla.
5. Add dry ingredients to mayonnaise mixture, beating until well blended, about 2 minutes.
6. Pour batter into buttered 13x9x2-inch baking pan.
7. Bake in 350 degree F oven 40 minutes or until cake tests done.
8. Cool in cake in pan on rack.
9. Cut cake in the middle into half, then spread it with choco glaze, cover it with another half of cake, then spread the rest of choco glaze on top of the cake.
Method: Chocolate Gaze
Melt chocolate and butter in the steamer. Add sugar gradually. Add water until consistency is thin for glazing.
Use immediately to drip or spoon over the cake or keep warm until needed.
