Tomato and Mozzarella bruschetta
Ingredients
4 english muffins4 garlic cloves, crushed
2 tbs butter
1 tbs chopped basil
4 large, ripe, tomatoes, peeled
1 tbs tomato paste
8 pitted black olives, halved
1 3/4 oz/50 g mozzarella cheese, sliced
salt and pepper
fresh basil leaves, to garnish
dressing:
1 tbs olive oil
2 tsp lemon juice
1 tsp clear honey
Instructions
1) cut the muffins in half to give eight thick pieces. toast the muffin halves under a hot broiler for 2-3 minutes until golden.2) mix the garlic, butter, and basil together and spread onto each muffin half
3) chop the tomato flesh and mix with th tomato paste and olives. Divide the mixture between the muffins.
4) mix the dressing ingredients and drizzle over each muffin.
5) place a slice of mozzarella cheese on top of each muffin and season
6) return the muffins to the broiler for 1-2 minuts until the cheese melts
