Zucchini squash casserole
Ingredients
2 T butter1 onion chopped
3 cloves garlic chopped
6 zucchini sliced into half moons
1 can diced tomatoes
1 T thyme
2 T AP flour
1 T brown sugar
2 beaten eggs
1/2 C milk
1/2 C grated cheese
1t salt n pepper
Instructions
Saute onion,garlic,zucchini and tomatos about 7 - 10 mins in butter then stir in flour.In seperate bowl, mix milk,eggs,brown sugar,thyme,salt and pepper and pour over zucchini mixture.
Sprinkle with cheeses and bake 30 mins on 375.
