Buttermilk biscuits
Ingredients
2 C Self-Rising flour1/2 C canola oil
1 C buttermilk
1 t sugar
If you dont have buttermilk, then you MUST make your own. You need the acid to help your biscuits chemistry to rise.
Just take a cup of regular milk and add 1 Tbsp lemon juice and put in microwave for 45 seconds. This will help the milk to turn into a buttermilk likeness.
Instructions
Put all ingredients into a large bowl and use your large spoon and your strength to stir it as if you were a professional dough hook. After the dough has been stirred good, it should start to come away from the bowl and with each stir of the spoon, the bowl should come clean.The dough should be sticky but you need to understand that in order to have a great biscuit, you have to have enough oil, milk and flour. So this is where the work and experience come in. Because I've been making biscuits for so long, I dont knead them on a surface like most people because I have to know if my biscuits are wet yet dry enough. And the only way to know is if I'm holding and touching the dough. I sprinkle about another 1/4 C of flour on the ball of dough still in my bowl and start to lift and fold, lift and fold and work the dough right in the bowl. No need to ever dirty up the kitchen if you do the "bowl" thing just right. If its too wet, then keep adding flour until the the dough begins to feel like good dough. Ultimately the dough needs to feel lite and alive in your hands. Once the dough is where I want it, I then take a large clump of dough and dip it in the oil thats already waiting for me in my biscuit pan and I kneed the ball of dough in both my hands until the biscuit feels lite and smooth. Then I dip it back in the oil and flip it gently in the oil and place it in my biscuit pan and repeat until all of the pan is full.
450 preheated oven
Bake at 450 degrees until golden brown.
Let rest for at least 10 mins before serving. Resting helps the biscuit to not fall apart. You always want to let oven baked foods rest or they normally will crumble or not set properly.
