Cookie Bars cream cheese and pudding
Ingredients1/2 stick butter, softened
1/2 pkg cream cheese softened
3/4 cup brown sugar splenda
1/4 cup white sugar substitute
1 small package (3.4 ounce) Instant cream cheese pudding mix
2 large eggs
1 teaspoon vanilla extract
1 teaspoon almond extract
1 C Carbquick
1 1/4 C Self rising flour
nuts/choc chips optional
Preheat oven to 350 degrees F.
In a large bowl, mix together the butter, both sweeteners, pudding mix, eggs and extracts. Beat with a hand mixer, on medium speed until creamy and combined.
Gradually add in the flours to the mixture. Beating on low speed until just combined. Stir in the chocolate chips and nuts if you are using them.
Drop batter by Tablespoons on un-greased cookie sheets. Bake for only 8-10 minutes. (They may not seemed fully baked, but they are. Do not over bake!)
Remove from oven and let cookies rest and cool on the cookie sheets. No need to transfer to wire racks.
Serve with milk and enjoy these delicious devils
I actually spread this mixture out into a cookie sheet covered with sprayed foil to make one large cookie to cut into bars.
I used the other 1/2 of the cream cheese and 1 container of s/f white frosting and microwaved for 35 seconds until cream cheese frosting mixture was soft. Mix well. Add sprinkles and pour over cookie bar base. Sprinkle with a few more sprinkles. Let cool for 1 hour.
