Garbonzo bean salad
Ingredients
1/3 C canola oil2 1/2 T red wine vinegar
1 t dried mustard or 3/4 t dijon mustard
salt n pepper to taste
1 head iceberg lettuce chopped
1/3 romaine lettuce chopped
1/4 lb salami sliced
1 C shredded mozzarella
1 can drained garbonzo beans
1 chopped tomato
shredded basil leaves optional
Instructions
To make vinaigrette: combine oil, vinegar, mustard, and salt and pepper to taste; whisk until well blended. Set aside.In a large bowl, combine lettuces, salami, mozzarella, and garbanzo beans. Toss with vinaigrette to taste.
Garnish with tomato and basil if desired.
