Testing out Meghan Markle’s one pan pasta recipe. I tweaked it a bit for our taste preferences. She adds Swiss chard and Kale and I swapped out with mixed greens. She boiled everything in one pan and chose to simmer the garlic and tomatoes in olive oil before adding water.
Ingredients
1 can diced tomatoes
1 large chuck of fresh brick Parm sliced and diced (It will melt)
salt, pepper, Italian seasonings
1 large chunk of real butter.
2 large handfuls of mixed greens
1 can Cannelloni undrained
1 spoon jar of minced garlic
1 box Spaghetti (I break mine in 1/2)
Water to cover 1 inch over pasta
Instructions
In a large skillet or pan add 3 tbsp of olive oil, 16 ounces of grape tomatoes OR can of diced tomatoes, 4 tbsps of minced garlic or 1 spoon JARLIC and salt pepper to taste. Cook on low heat for 10 minutes while occasionally stirring around. Next pour in one cup of water and stir the sauce to collect and clumps sticking to the pan. Add water until broth tasty and ready to boil. Then add one package of pasta. Cover with a lid and cook for 7-8 minutes. Uncover and mix pasta around so it doesn’t stick together and finish cooking for another 3-4 minutes. You may need to add more water if the sauce is too thick. Then turn off heat and add in the cheeses extra salt, pinch of allulose or anything else that makes it yummy.
