Breakfast Enchiladas
Ingredients
1lb sausage2 or 3 cups shredded cheddar cheese
12 corn tortillas
8 eggs
1 small can diced green chilies
1 T all-purpose flour
2 cups of milk
salt n pepper to taste
Instructions
Brown sausage in skillet then pour off excess grease. Add chilies.Let sausage cool
Whip eggs, salt n pepper, milk and flour. Set aside.
Spray glass pan.
Take each corn tortilla and fill with meat and cheese. Place seam side down. I got 12 full into my pan.
Pour egg custard mixture over all of the enchiladas and sprinkle remaining cheese.
Bake uncovered 30 minutes at 350 degrees.
