Yellow Rice
Ingredients
2 C white riceEnough water or preferably chicken stock to cover rice by 1/2 inch over.
1/2 C canola oil
salt to taste
1 packet Sazon seasoning
1 med onion chopped
note , I use a large chicken boullion in my water when I dont have chicken stock.
Instructions
Put oil in pan and turn on to Med high.After oil is hot, add dry rice and being to brown.
After rice begins to turn opaque add onions and stir for another min.
Add the rest of the ingredients and bring to a boil.
Reduce heat to low and simmer for 20 minutes. Turn off heat keeping lid on and continue to let the rice steam in the pot with lid on. Fluff with fork when ready to serve.
Note!! brighter yellow color, add more Sazon yellow color.
