Crunchy Chicken Florentine
Ingredients
1 can Cream of Mushroom Soup1/2 can Milk 1 cup Sour Cream
Salt and pepper to taste
1lb Chicken Fillets, cooked, cubed
2 cups Fresh Spinach, chopped
1 cup Mozzarella Cheese, grated
1/2 cup Butter, melted
16 Ritz Crackers, crushed {Salticrax Crackers}
1 TB Poppyseed
1 t Fresh Garlic, crushed
Instructions
DIRECTIONS:
1.) Pre-heat the oven to 350 - spray dish with cooking oil.
2.) Combine the Soup, Milk and Sour Cream in a mixing bowl - add Salt and Pepper - pour half of this mixture onto the bottom of the prepared oven dish.
3.) Scoop the Chicken over the mixture evenly, followed by the Spinach.
4.) Pour the remaining Soup mixture over the Spinach - sprinkle the Mozzarella over.
5.) Combine the Butter, crushed Crackers, Poppyseed and Garlic in a small mixing bowl - sprinkle over the Mozzarella - bake 25 - 30 minutes or until the crumbs are golden brown and the sauce bubbly.
Serve with mashed potatoes or rice and a side or two.
