Chicken or Sausage Fideo-Spanish Spaghetti
Ingredients
2 or 3 chicken breasts cut in chunks OR 1 or 2 pks of smoked kielbasa sliced1lb vermicelli pasta broken in pieces or 1lb spaghetti pasta broken
2 large onion chopped
1 large can tomatoe sauce
1 large can water as needed
1 med can diced tomatoe or fresh chopped
3 or 4 cloves garlic sliced i love garlic
1/2 T cumin
1/2 T chili powder
1/2 T salt
1/2 T brown sugar
1/2 T Chrystal tobassco sauce
canola oil to coat pan
shrimp/chicken/pork,sausage
Instructions
Coat pan with oil bring to med heat.Sauté chicken or sausage and 1 onion until done. Add broken pasta and
sauté until opaque. Stir in everything else. Leave lid off and continue to fry the spaghetti mixture for another couple of minutes or until bubbly. If you get little burnt pieces, they are yummy. Right b4 done, add rest of onion and make sure seasoned to taste. Put lid on turn down low to finish cooking till tender.
Garnish with cilantro/lime and load it down with tabassco sauce on your plate. Dish should be very spicy and sweet from the onions. You'll become addictive. MEN LOVE THIS DISH. Not for the faint of heart.
Mom got this recipe from a co-worker in Mansfield Tx in 1979 One of the few familys that make this today.
We serve with fried corn.
