King Ranch Casserole
Ingredients
Olive Oil to coat pan
2 chopped green bell peppers
1 cup chopped yellow onion
1 can (10-3/4 oz each) condensed cream of chicken soup
1 can (10-3/4 oz each) condensed cream of mushroom soup
1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
1 pkg chicken tenderloin raw and cut up
1 can black beans
12 corn tortillas (6 inch), torn into bite-size pieces
2 cups shredded Cheddar cheese (2 cups = 8 oz)
Instructions
Cut up chicken and place in pot.Add every else except for cheese and tortillas.
Saute and heat thoroughly.
Spray glass baking dish with non stick spray.
Layer bottom with some broken pieces of tortillas.
Ladle chicken mixture over that and sprinkle a 3rd of the cheese.
Repeat until everything used up and cheese is on top.
Bake uncovered 325 for 40 mins.
