Southwest Pork Stew
Ingredients3 pork steaks deboned and cut up into small chunks
1 bell pepper
1 large can/jar of spaghetti sauce
1 glove garlic chopped
1 jar Tostitos medium queso cheese sauce
2 TBsp oil
1 TBsp creole seasoning
1 TBsp cumin
1 Tsp cilantro
1 TB corn starch
2 cups cooked rice
InstructionsCut up meat and veggies into bite size pieces. Drizzle oil in skillet and turn on med-high. Sprinkle meat with corn starch and sauté until browned. Add veggies and sauces and spices and simmer for 30 mins on low heat. Serve over rice.
Optional, you can add corn and black beans for added flavor and textures and also will stretch for a crowd.
Also optional, you can substitute pork for chicken or ground beef.
