LOW CARB ZUCCHINI QUICHE
Ingredients
Crust:1 1/2 C Mozzarella
2 T butter
1 egg (I actually accidently left the egg out and it was great)
3/4 C Almond Flour
1 T Coconut Flour
2 T Oat Fiber
1/2 t Xanthium Gum
Filling
4 Cups cut zucchini (I used 3 cups plus 2 chopped poblano peppers
3 green onions
1 C chopped Deli Ham
2 T bacon fat
4 oz cream cheese
2 eggs
2 C Mozzarella Cheese
1 T chopped garlic
1/2 t onion powder, parsley, basil, oregano, dried onions, salt and pepper
Instructions
CrustMelt butter and cheese and continue to stir and heat until fully melted. Add egg. Add dry mixture and knead with hand. It was hot to touch.
Put dough in center of glass pie plate and press outward until bout 1/2 high past rim.
Meanwhile, have all meat and veggies sautéing in pan with bacon fat.
Add spices once veggies are tender. Then pour into unbaked crust.
Melt cream cheese and add 2 eggs. Use submersion blender to whip cream cheese and egg together. Add mozzarella cheese to egg mixture and pour into crust.
Preheat oven to 400 and bake 30 mins.
This was the best thing I've had in quite a while.
