Thai pineapple curry chicken crockpot
Ingredients
2 cans coconut milk2 cups diced chicken (I deboned a routissere chicken)
1 can chicken stock or (1 can water + 1 boullion cube)
1 tsp salt
1 Tbsp brown sugar
2 Tbsp green or red curry paste
1 Tbsp fish sauce or oyster sauce
1 diced large onion
1 Tbsp garlic chopped or garlic powder
1 Frozen pkg mixed vegetables (I used california mix)
1 can pineapple chucks or tidbits with juice
1 TB canola oil
Instructions
Put all ingredients including pineapple juice into the crock pot and put on low setting. I cook low all night long and then put on warm setting during church. After church I make the rice.Will be sweet and spicy but cmon you need a little something to open you up!

FYI , California mix is broccoli,cauliflower and carrots. You can use w/e veggies you want to use up. Makes a great pot for left overs if you have any.
