Beef and Poblano Peppers Cornbread Casserole
Ingredients
1 1/2 lbs ground beef4-6 poblano peppers diced
1 large onion
1 can corn
1 can black beans
1 can diced tomato
1 bell pepper
2 cups shredded mexican cheese blend
Adobo seasoning/garlic power/cumin to taste
1 Tspn brown sugar (sugar adds richness to the savory)
3 cups prepared buttermilk cornbread mixture ready to pour (I added 1 spoon of sugar for richness)
Instructions
Cook beef and veggies. Add seasonings to taste. Set asidePrepare cornbread mixture as directed so you have about 3 cups worth.
Take roaster pan and spray with non-stick spray.
Pour 1 Cup of cornmeal mixture on bottom and then layer with 1/3 meat mixture and 1/3 of cheese. Repeat making sure last layer is covered with cornmeal mixture and remaining cheese.
Bake 350 degrees for 40 minutes or until completey done.
