Oh So Quick and Easy Shrimp and Grits
Ingredients
1 lb. Cooked, peeled shrimp3 c chicken broth
1 c whipping cream or milk
¼ c butter
1 tsp salt (or to taste)
1 c quick cooking grits
1 c grated cheddar cheese
1 tsp minced garlic
6 slices precooked bacon, crumbled*
Chopped green onions*
Instructions
Boil shrimp until done. (Perfectly cooked shrimp curl to form a 'C'. Overcooked shrimp form an 'O'. Don't overcook your shrimp!) Bring broth, cream, butter and salt to boil. Stir in grits and reduce heat to medium. Cook, whisking 7 to 8 minutes. Stir in cheese and garlic, cook 1 minute or until heated through. Stir in shrimp. Spoon into bowls and garnish with bacon and green onions.*optional ingredients
