My Mashed Cauliflower
Ingredients
1 very large head of cauliflower, or 2 small heads1/4 stick butter
2 oz cream cheese
1/4 C Parmesan
2 T whipping cream
salt and pepper to taste
1/2 T Garlic Powder
Instructions
Put cauliflower florets into pot and rince.Add 2 cups of water to bottom of pot.
Add 1 Tbsp. Salt and bring to boil.
Place lid back on pot and over veggies.
Boil until fork tender at least 6 mins.
Drain WELL. I find better to pour into strainer and press as much moisture out as possible.
Place steamed cauliflower back in pot and add rest of ingredients.
Use submersion blender and pulse blend until resembles mashed potatoes.
Taste and add more seasonings if needed.
I think I prefer this over regular mashed potatoes because its light and beautiful.
