Thai seafood in peanut sauce with rice noodles
Ingredients2 tbsp red curry paste or to taste (2 might be too spicy for some people)
1 tsp galangal
1 tsp holy basil
2 cans coconut milk
1 tbsp chunky peanut butter
1/4 cup splenda or sugar to taste
1 cup water
1 frozen bag cauliflower
1 bag small shrimp
1 or 2 bags chunk imitation crab meat
1 box rice noodles
1/3 cup chopped peanuts
InstructionsOn medium heat,heat in large pot the curry paste,seasonings,coconut milk,peanut butter,sugar and water. Stir mixture until creamy.
Add cauliflower and seafood and bring tempterature back up. Place lid on pot and simmer until everything is well heated.
Add dry rice noodles and break up into the seafood mixture and cover.
You dont have to presoak the noodles because they will absorb the sauce.
Stir mixture around every 5 minutes until everything cooked and heated thoroughly.
Sprinkle chopped peanuts on top right before serving.
Serves 4-6 people.
