Easy Whoopie Pie from Iowa Farmer
Ingredients
2, 18 1/4 oz pkgs, devil's food cake mix, dry1 c vegetable oil
4 eggs
Filling:
1, 8-oz pkg cream chesse, softened
1/4 c butter or margarine, softened
2 1/2 c powdered sugar
1 tsp vanilla
Instructions
In a mixing bowl, combine cake mixes, oil and eggs.Roll into balls the size od walnuts for large cookies, or into one-inch balls for smaller cookies. Place two inches apart on ungreased baking sheets.
So not flatten. Bake 8-10minutes at 350 degrees or until just set. Do not overbake. Cool a few minutes on cookie sheets before removing to a wire rack. Cookies will flatten as they cool.
For filling: In a small mixing bowl, combine the cream cheese and butter. Mix well with mixer. Add sugar and vanilla, and beat until smooth. Spread on the bottom of half of the cookies and top iwth remaining filling. Store in the refrigerator or freezer. Makes approximately two dozen pies if using the larger dough amount and three dozen pies if using the smaller amount.
