Teresa's Rice Pudding
Ingredients
1 1/2 Cups of riceapprox. 2 cups of water
approx. 4 cups of milk
2 eggs
sugar
cinnamon
butter
Instructions
Bring 2-2 1/2 water to a boil.Add rice. Stir constantly as rice tends to stick to the bottom of the pan.
When water is absorbed, add 2 cups of milk and continue to cook and stir.
When that liquid is mostly absorbed, add another cup of milk. Start tasting occasionally to see if rice is still crunchy. As liquid absorbs, add more milk if rice is still crunchy. Continue to do this until rice is tender and does not crunch when biting into it.
When rice is cooked, add 2 beaten eggs. Stir constantly so eggs are well mixed in, about 2-3 minutes.
Remove from the stove. Add sugar, starting with 1/2 cup. Continue to add sugar until it reaches the sweetness you like.
Pour into a serving bowl. Sprinkle with cinnamon and add dabs of butter to the top.
Best served warm and with a little milk.
