Slow Cooked Pulled Pork (TOH teacher contest)
Ingredients
2 tbsp brown sugar4 1/2 tsp paprika
2 tbsp coarsely ground pepper, divided
1 tbsp kosher salt
1 tsp chili powder
1/2 tsp cayene pepper
1 boneless pork should butt roast (3-4 lb)
cut in half
1 c cider vinegar
1/4 c beef broth
1/4 c BBQ sauce
2 tbsp Worcestershire sauce
1 1/2 tsp hickory Liquid Smoke, optional
10 Kaiser rolls, split
Instructions
1. In a small bowl, combine brown sugar, paprika, 1 tbsp pepper, salt, chili powder and cayenne. Rub over roast; cover and refrigerate for 8 hours or overnight.2. Place roast in a 4-5 qt slow cooker. Combine vinegar, broth, BBQ sauce, Worcestershire sauce, Liquid Smoke, of desired, and remaining pepper; our over roast. Cover and cook on low for 8-10 hours or until meat is tender.
3. Romove meat from slow cooker; cool slightly. Shred meat with two forks and return to the slow cooker; heat through. Using a slotted spoon, place 1/2 c on each roll.
