Chicken and Rice Soup from Ia Farmer
Ingredients
6 c chicken broth2 c diced chicken meat, cooked
2 c cooked rice
1 small onion, diced, about 1 cup.
4 stalks celery, diced, about 1 cup
Instructions
For homemade broth:After baking a whole roasting chicken, strip the bones and cover bones with water in a large pot. Boil on low heat for at least 30 minutes, then remove the bones.
Mix soup ingredients and simmer on low at least another 30 minutes. I prefer soup to sit overnight for a richer flavor.
