Chris Bauer's Napa Cabbage Salad
Ingredients
1 c oil3/4 c sugar
1/2 c vinegar
2 tsp soy sauce
1 head Nappa cabbage, shredded
5 green onions with tops, chopped
2 pkg ramen noodles, broken in small pieces
1/2 c sliced almonds
Instructions
Mix first four ingredients well and chill.Then melt 1/4 c margarine in a fry pan. Add two packes of chicken Ramen noodles, broken in small pieces. They can be broken while still in the package. Add 1/2 c sliced almonds. Stir over medium heat until lightly browned. Srpinkle on seasoning packages from the noodles and then cool on paper towels. This can be made ahead of time and kept in a baggie or jar.
Combine cabbage and green onions in a large bowl. Add the noodle mixture. Pour on enough dressing to taste just before serving (too much dresing will make the salad soggy). The dressing recipe makes more than you need for this salad. It can be saved and stored in refrigerator.
For use as a main dish, add two cups diced, cooked chicken.
