Pork and Sauerkraut Supper
Ingredients
2 tbsp salad oil6 pork chops - 3/4" thick
1 med onion, diced
1 3/4 c apple juice
2 - 16 oz cans or bags sauerkraut, drained
3 med potatoes, cut 1/4" thick
2 med red cooking apples, cut 1/2" chunks
2 tsp brown sugar
1/8 tsp pepper
Instructions
In a skillet, in hot salad oil, cook pork chops until browned. Remove to plate. In drippings remaining in skillet, cook onion until tender. Add 1/4 c apple juice, loosen brown bits from bottom of skillet.In 13x9" baking dish, combine onion mixture, sauerkraut, potatoes, apples, brown sugar & remaining apple juice. Tuck pork chops in sauerkraut mixture, sprinkle chops with pepper & 1/2 tsp salt.
Cover dish with foil & bake in 350 degrees oven 2 hours until meat & potatoes are fork tender, occasionally basting meat & potatoes. 555 calories
