Tomato Veggie Sauce
I have used this as the base for my vegetable beef soup. I use at least one freezer container of 2-4 cups when I'm cooking the beef with some water for the broth.
Ingredients
Use fresh vegetables.20 tomatoes, peeled and chopped
4 onions, chopped
2 green peppers, diced
1/2 cup fresh parsley, chopped or can use dried parsley flakes
4 carrots, grated
3 tbsp. Sugar
2 tbsp salt
1/2 tsp pepper
Instructions
Simmer 30 minutes on the stove and cool.Put in blender and purée. Put in containers and freeze. Could probably strain if you you prefer. Reminds of the flavor of V8 juice.
