Baked Beans like Elaine's
Made from scratch
Ingredients
2 lb navy beans1 tsp salt
3 tbsp brown sugar
1/2 c molasses or dark Karo syrup
2 tsp dry mustard
2 cans tomatoes, 1 quart
1 medium onion, chopped
3/4 lb salt pork
Instructions
Cover beans with cold water. Soak overnight. Drain, add cold water to cover and simmer until skins burst.1 - 1 1-2 hours. Turn into heavy casserole without draining.
Combine salt, brown sugar, and onion. Add to beans. If liquid does not cover beans, add hot water.
Scrape salt pork rind and cut deep gashes in fat 1/2" apart. Press into beans leaving only rind exposed. Cover and bake in slow oven (275) 6-8 hours, adding more water as needed to keep beans covered. Remove cover during last half hour of baking. Serve with catsup or chili sauce.
