Gin's Brownies
Ingredients
1 1/2 c lowfat milk, divided1 tbsp white vinegar
1 tsp. baking soda
2 eggs, lightly beaten
1/4 c unsweetened cocoa
1/2 c unsalted butter
2 c all-purpose flour
1 2/3 c sugar
1 tsp vanilla extract
Instructions
Preheat oven to 350 degrees. Pour 1/2 c milk into small bowl. Add vinegar and let sit 5 minutes. Whisk in baking soda and eggs until frothy. Set aside. In saucepan over medium heat, mix cocoa, buter and 1 c milk. Whisk until butter is melted. Remove from heat. In a large bowl, mix flour and sugar. Pour in cocoa mixture and beat well. Pour in egg mixture and beat well. Add vanilla and beat until smooth. Pour batt into a 13x9" baking pan coated with cooking spray. Bake 25-30 minutes or until tests clean with toothpick. Cool completely.Frosting:
4 tbsp unsalted butt
2 tbsp lowfat milk
1/2 c chocolate chips
1 c. powdered sugar
Combine 4 tbsp butter and 2 tbsp milk in saucepan over medium heat. Whisk until melted. Add chocolate chips, stirring constantly until milted. Remove from heat. Add powdered sugar and beat until frosting consistency. If too thick, thin with 1 tsp milk. Frost brownies and cut into 32 " squares.
